Looks very good up to now. The horse seems to be a little bit thin although I am really not a horse expert so it might has to be that way.
For the UVs I recommend UVLayout. It is a really handy standalone program which allways saves me a lot of time when it comes to unwrapping. Just check out the website where you can download a demo version with the most basic features [link]
